Turkey Panini with avocado, spinach and red peppers Serves 4 1/2 cup mashed avocado 4 pieces (2.75 oz each) Ciabatta bread split open Salt and pepper 2 cups baby spinach 8 oz thinly sliced turkey breast 8 thin slices roasted red peppers (not oil packed) Olive oil mister
Preheat panini press (fry pan will work) Spread 2 tbsps of the avocado on the top of each piece of bread. Season with salt and pepper. Place 1/2 cup of spinach in the bottom of each piece of bread top with 2 oz of turkey and two slices of roasted pepper. Close Sandwich and lightly spray the tops with a little olive oil. Place in panini press for about 5 minutes till brown and crisp. No press do like grill cheese but put s weight on top.
