Ingredients: 2tsp olive oil, 12oz Italian turkey sausage, casings removed, 1 lrg onion, chopped, 1/2-1 green bell pepperepper, chopped, 1c diced carrot, 2-3 cloves garlic, minced, 32oz organic vegetable broth, 15oz can tomato sauce, 15oz can petite diced tomatoes, 1/4 tsp crushed red pepper, 4oz lasagna noodles, broken into bite size pieces, 1/2c chopped fresh basil.
Directions: Heat the oil over medium high heat in a large non-stick saucepot or Dutch oven. Add the onion and saute for 3-4 mins. Add the carrots, sausage, bell pepper, garlic, saute until sausage is cooked. Add broth, tomato sauce, diced tomatoes, crushed red pepper. Bring to a boil, simmer about 20 mins. Add noodles, bring to a boil, simmer, stirring occasionally for 10-12 mins. Makes 5 servings - 5sp per serving. Best topped with parmesan - add 1sp. (I always double recipe - it freezes perfectly.)
