Blueberry lemon muffins.
(Recipe is adapted from My New Sweet Tooth. )
Makes 6 muffins.
3 pp 4 sp each
2 pkts of plain unsweetened oatmeal (instant)
1/2 tsp true lemon crystals.
Pinch salt
2 eggs
1/2 cup unsweetened applesauce.
Mix with stick blender.
Add 4 tbsp Bob’s Red Mill 7 grain pancake mix.
1 tbsp coconut sugar
1 tsp baking soda.
Mix again until well mixed together.
Fold in 1/2 cup blueberries.
I puncture the blueberries so they don’t explode.
Lightly grease a 6 cup muffin tin.
Bake for 25-30 minutes at 300 or 250 in a convection oven.
Adjust time if needed.
Let cool.
